Stone Brewing built a €30M Berlin temple to craft beer — and handed it to BrewDog
The US craft brewer opened a ~€30M brewery and taproom in a Berlin gasworks to convert Reinheitsgebot loyalists; three years later it sold the site to BrewDog.

怎么回事
California's Stone Brewing, then one of America's ten largest craft brewers, opened Stone Brewing World Bistro & Gardens — Berlin in 2016: a brewery, canning line and vast taproom built into a restored 1901 gasworks in Mariendorf. Founder Greg Koch put roughly €30 million into the site (Brauwelt, citing insiders — plus several millions a year to keep it afloat), aiming to convert German drinkers — loyal to the Reinheitsgebot and local pilsners — to hop-forward American craft beer.
The format fit San Diego, not Berlin. The beers were sold only in cans while German retail runs on returnable bottles; the range was far too craft-forward and too expensive for local palates; and the 2,500 sqm bistro with 5,000 sqm of gardens sat in a residential district far from the neighbourhoods where the craft-curious actually drank. Construction ran over schedule and budget as well.
Production reached about 30,000 hl a year, mostly shipped to other European markets and back to the US. On 5 April 2019 Stone announced it was transferring ownership of the Berlin facility to Scotland's BrewDog, which took over on 1 May 2019, with Stone's own beer contracted to be brewed there. Koch conceded the project was 'too big, too bold and too early in our growth curve in Europe.'
为什么会这样
- The product defied its market's format: cans in a country that drinks from returnable bottles, hop-forward styles and craft prices in a pilsner market.
- The flagship was sized for the brand's self-image, not Berlin's demand: 2,500 sqm indoors and 5,000 sqm of gardens in a district the craft crowd never adopted.
- A heritage industrial site added romance and cost — a 1901 gasworks needing heavy maintenance, further delayed by Germany's construction industry.
- Demand was assumed, not tested: capacity preceded proof that Germans would switch, and the plant survived on exports to markets that already liked the beer.
教训
Enter a mature market on its formats and price ladder, not your own. Build the smallest flagship that tests demand — you can scale a taproom that works, but you can't unbuild a gasworks.
