Jollibee started as an ice cream parlor — customers wanted burgers instead
Tony Tan opened two Magnolia ice cream parlors in 1975. Customers kept ordering hot sandwiches. He switched to burgers, and Jollibee took the country.

What happened
In 1975, Tony Tan Caktiong and his family opened a Magnolia ice cream parlor in Cubao, Quezon City, Philippines. The business was a franchise of the Magnolia brand, selling ice cream and cold desserts. A second location followed. The family had invested their savings in the venture.
The ice cream parlors were not doing well. Customers, especially in the tropical heat, were more interested in hot meals and sandwiches than ice cream. The family noticed that the hot food items they had added as a sideline were outselling the ice cream. They had opened a business that nobody wanted.
With advice from management consultant Manuel C. Lumba, the family made a decision: convert the ice cream parlors into fast-food restaurants. In 1978, the first Jollibee outlet opened. The name was chosen to be cheerful and Filipino — a bee that jollies. The menu focused on burgers, fried chicken, and spaghetti, adapted to local tastes.
When McDonald's entered the Philippines in 1981, Jollibee survived by focusing on Filipino flavors (sweet spaghetti, burger with garlic rice). By 2024, Jollibee had over 1,700 stores in 17 countries. It was the Philippines' largest fast-food chain. A business that started as the wrong kind of restaurant became the right one.
