Buitoni's raw-dough Fraîch'Up pizzas caused France's largest E. coli-HUS outbreak

Frozen pizzas from a Caudry factory contaminated with STEC O26 killed two children and sickened dozens. Inspectors found degraded hygiene controls and rodents.

What happened

Between January and April 2022, France recorded a nationwide outbreak of Shiga toxin-producing E. coli infections, mostly in young children. The cases were linked to Fraîch'Up, a line of raw-dough frozen pizzas sold under Nestlé's Buitoni brand and produced at the SPAC factory in Caudry, northern France.

On 18 March 2022, Nestlé recalled the Fraîch'Up pizzas and suspended production at the Caudry site. Santé Publique France and the French health ministry confirmed the epidemiological link. Subsequent inspections found degraded food-hygiene controls, evidence of rodents and insufficient pest-prevention measures at the plant. Two children died and around 50 people developed haemolytic uraemic syndrome, a severe kidney complication.

The Caudry factory remained closed and was eventually shut permanently in March 2023 after Nestlé concluded that reputational damage and falling demand had made the site economically unviable. In 2024, French prosecutors placed Nestlé France and the Caudry subsidiary under formal investigation for involuntary manslaughter and bodily harm.

Why it happened

The lesson

Raw-dough products erase the safety margin that cooking provides. A plant's hygiene controls must match the risk of the product, and one product line can carry company-wide liability.

Aftermath

Nestlé permanently closed the Caudry pizza factory in March 2023. In 2024, prosecutors opened a formal investigation into involuntary manslaughter. The case became the largest E. coli-HUS outbreak documented in France and prompted tighter scrutiny of ready-to-cook frozen foods.
