Souplantation survived bankruptcy in 2016 — COVID closed all 97 buffets for good
Souplantation's format was self-serve buffet dining. When COVID guidance discouraged shared self-serve stations, that was the whole restaurant, not one feature.

Souplantation (Sweet Tomatoes outside California) opened in San Diego in 1978 on a simple format: a large self-serve salad bar plus a rotating soup, pasta and bakery buffet, all-you-can-eat for a flat price. It grew to nearly 100 locations, went public in 1995, was taken private in 2004, and in 2016 filed for Chapter 11 with about $175M in debt before emerging in January 2017 under Cerberus Capital Management ownership.
When COVID-19 shutdowns hit in March 2020, all 97 locations closed along with every other dine-in restaurant. But Souplantation's format had no other mode: table service, delivery and takeout could not replicate a self-serve buffet, and public-health guidance at the time specifically discouraged shared self-serve stations as a transmission risk. Health departments were expected to withhold reopening approval for buffet-style service even after other restaurants resumed dine-in.
On May 7, 2020, Garden Fresh announced the closures were permanent, laying off roughly 4,400 employees. The parent company filed for Chapter 7 liquidation a week later. The brand did not disappear entirely: its assets and recipes were bought by ST Three LLC in 2021, and a first revived location reopened in Tucson, Arizona in 2024, followed by a second in Fort Myers, Florida in 2026 — both under a modified, more distancing-friendly service model.

A format built entirely around one mechanism has no partial-failure mode. Souplantation could not trim the buffet and keep the restaurant — the buffet was the restaurant.

Garden Fresh Restaurant Corp liquidated under Chapter 7 in May 2020. The Souplantation and Sweet Tomatoes brands were bought out of the estate by ST Three LLC in 2021 and began a slow relaunch with a single Tucson location in 2024 and a second in Fort Myers in 2026, both scaled back from the original 97-location footprint.
